A light and refreshing side dish combining cubed watermelon and fresh, chopped cucumbers with minced mint leaves using our Dark Balsamic Vinegar and Sicilian Lemon or Basil Genovese Olive Oil.

Yield: 4-6 People

Ingredients:

– 3 cups Watermelon, cubed
– 1/2 Cucumber, chopped
– 10-15 Mint Leaves, minced
– 1/4 cup Olive Oil (Sicilian Lemon or Basil Genovese)
Instructions:
  1. In a bowl combine all the ingredients and toss.
  2. Allow to sit in the fridge for at least an hour, stirring occasionally, for the flavors to marry.
