If you’re looking for a quick, healthy weeknight dinner, these salmon and quinoa bowls hit all your marks. Heart-healthy salmon, delicious veggies and whole grains easily combine for this beautiful bowl, in less than 30 minutes.

Yield: Serves 2

Ingredients:

1/2 cup quinoa

1/4 cup cucumber

1/2 cup carrots

1 radish, sliced thin

1/4 cup cilantro

1/4 of an avocado

1/4 cup shelled edamame

1/3 cup smoked salmon

1/4 cup Roasted Shallot EVOO

2 TBSP Black Garlic Tamari Soy Balsamic

1 tsp honey

1/2 tsp Black Garlic Shiitake Rub

Instructions:
1. Cook quinoa following package directions.
2. In a bowl add quinoa to the bottom, arrange cucumber, carrots, radish, cilantro, avocado, edamame and salmon around the edge of the bowl.
3. In a bowl whisk together oil, vinegar, honey and rub.
4. Serve sauce on the side of bowl or toss to coat.
