The real star of this dish is the pinto beans which are packed full of flavor thanks to Olivelle&#8217;s Cumin &amp; Garlic Taco Seasoning Rub. Paired with a crunchy toastads, runny egg, and plenty of fresh toppings!<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1 can Pinto Beans, drained and rinsed<\/li>\n<li>6 Tbsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/fiesta-spice-olive-oil\/\">Fiesta Spice Infused Olive Oil<\/a>, divided<\/li>\n<li>2 Tbsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/cumin-garlic-taco-rub-seasoning\/\">Cumin &amp; Garlic Taco Rub &amp; Seasoning<\/a><\/li>\n<li>1 Lime, juiced<\/li>\n<li>\u00bc tsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/lime-fresco-sea-salt\/\">Lime Fresco Sea Salt<\/a><\/li>\n<li>6 Small Corn Tortillas<\/li>\n<li>6 Eggs<\/li>\n<li>\u2153 cup Cotija Cheese, crumbled<\/li>\n<li>2 Roma Tomatoes, diced<\/li>\n<li>1 Jalape\u00f1o, diced<\/li>\n<li>\u00bc cup Cilantro, chopped<\/li>\n<li>1 Avocado, sliced<\/li>\n<li><a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/jalapeno-lime-white-balsamic-vinegar\/\">Jalape\u00f1o Lime Balsamic Vinegar<\/a>, to finish<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>Preheat the oven to 350F.<br \/>\nIn a food processor blend pinto beans with \u00bc cup water, 2 Tbsp olive oil, rub, lime juice, and salt. Add to an oven safe dish and bake for 8-10 minutes, or until the beans are warm.<br \/>\nMeanwhile in a large nonstick skillet over medium heat add 2 Tbsp olive oil, fry tortillas 2-3 minutes per side or until golden. Set aside.<br \/>\nAdd remaining 2 Tbsp olive oil and crack eggs into the skillet. Once the outer whites begin to set add 1 Tbsp of water to the pan and cover. Let eggs cook until whites are set about 2 minutes.<br \/>\nTo assemble tostada, spread a heaping spoonful of beans over tostada, top with an egg, cotija, tomatoes, jalape\u00f1o, cilantro, and avocado slices. Finish with a drizzle of Jalape\u00f1o Lime Balsamic Vinegar.
