Whether enjoyed as a comforting meal on a chilly evening or shared with loved ones during a festive gathering, this soup is nothing short of a celebration of bold and comforting flavors.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>2 Chicken Breasts, cut into 1\u201d cubes<\/li>\n<li>3 Tbsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/chili-oil\/\">Vera Cruz Chili Infused Olive Oil<\/a>, divided<\/li>\n<li>\u00bd Large Yellow Onion, diced<\/li>\n<li>1 Red Bell Pepper, diced<\/li>\n<li>1 Jalape\u00f1o, diced<\/li>\n<li>3 Cloves Garlic, minced<\/li>\n<li>4 Tbsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/jalapeno-lime-white-balsamic-vinegar\/\">Jalape\u00f1o Lime White Barrel Aged Balsamic<\/a>, divided<\/li>\n<li>1 \u00bd Tbsp + 2 tsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/cumin-garlic-taco-rub-seasoning\/\">Cumin &amp; Garlic Taco Rub<\/a>, divided<\/li>\n<li>\u00bc cup Flour<\/li>\n<li>3 cups Chicken Broth<\/li>\n<li>1 can Diced Tomatoes, unsalted<\/li>\n<li>1 can Black Beans, rinsed<\/li>\n<li>1 cup Corn, frozen or canned<\/li>\n<li>1 Lime, juiced and zested<\/li>\n<li>\u00bd cup Milk, room temp<\/li>\n<li>Cilantro, Sour Cream, Shredded Cheese &amp; Tortilla Chips, to serve<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<ol>\n<li>In a bowl combine the chicken with 1 Tbsp Vera Cruz Chili Olive Oil, 2 Tbsp Jalape\u00f1o Lime White Barrel Aged Balsamic, and 2 tsp Cumin &amp; Garlic Taco Rub &amp; Seasoning. Let marinate 30 minutes up to 6 hours.<\/li>\n<li>In a soup pot at least 4 quarts or bigger, heat the remaining 2 Tbsp Vera Cruz Chili Infused Olive Oil over medium heat. Add in the diced onion, red bell pepper, and jalape\u00f1o. Saut\u00e9 until softened, about 5 minutes. Add garlic and cook for another minute.<\/li>\n<li>Season the veggies with the remaining 1 \u00bd Tbsp of Cumin &amp; Garlic Taco Rub and 2 Tbsp Jalape\u00f1o Lime Balsamic.<\/li>\n<li>Turn heat to high then add in chicken and flour, saut\u00e9 until the flour is cooked out, about 2 minutes.<\/li>\n<li>Deglaze pan with 1 cup of chicken stock and stir, scraping the bottom of the pot. Add in remaining chicken broth, tomatoes, black beans, and corn. Bring soup to a simmer then turn heat to low, cover, and cook for 20 minutes.<\/li>\n<li>Add the milk, lime juice and zest of one lime. Stir to combine.<\/li>\n<li>Dish soup into bowl and top with cilantro, sour cream, shredded cheese, and tortilla chips.
