Bright tomatoes and bell peppers make a rich suace for creamy poached eggs- served with Naan to soak up every last bit of this delicious dish!<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>2 Tbsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/curry-infused-olive-oil\/\">Curry Infused Olive Oil<\/a><\/li>\n<li>1 Onion, diced<\/li>\n<li>1 Red Bell Pepper, seeded and diced<\/li>\n<li>1 Tbsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/mango-masala-rub-seasoning\/\">Mango Masala Rub<\/a><\/li>\n<li>1 Tbsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/ginger-white-balsamic-vinegar\/\">Ginger Balsamic Vinegar<\/a><\/li>\n<li>2 tsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/cumin-spice-sea-salt\/\">Cumin Spice Sea Salt<\/a><\/li>\n<li>28 oz can Crush Tomatoes<\/li>\n<li>14 oz Can Chickpeas<\/li>\n<li>6 Eggs<\/li>\n<li>3 Tbsp Feta Cheese, crumbled<\/li>\n<li>1\/4 cup Cilantro, chopped<\/li>\n<li>Naan, for serving<\/li>\n<\/ul>\n<p><strong>DIRECTIONS<\/strong><\/p>\n<ol>\n<li>Heat the Curry Infused Olive Oil in a large oven sage skillet over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes. Add Mango Masala Rub, Ginger Balsamic Vinegar, 1 tsp<\/li>\n<li>Cumin Spice Sea Salt, tomatoes, and chickpeas.<\/li>\n<li>Cook, stirring occasionally, until the mixture thickens and becomes a sauce, about 10 minutes.<\/li>\n<li>Strategically crack the eggs atop the tomato sauce.
