Make a large batch and enjoy through the week or freeze the leftovers for easy meal prep. Sweet potatoes are seasoned to perfection with our Curry products then blended into a creamy soup. Warming, aromatic, and oh so tasty!<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<p><strong>BISQUE<\/strong><\/p>\n<ul>\n<li>3 Tbsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/curry-infused-olive-oil\/\">Curry Infused Olive Oil<\/a><\/li>\n<li>1\/2 Yellow Onion, diced<\/li>\n<li>4 Cloves Garlic, minced<\/li>\n<li>1 tsp Ginger, freshly grated<\/li>\n<li>2 Large Sweet Potatoes, diced<\/li>\n<li>2 Tbsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/mango-masala-rub-seasoning\/\">Mango Masala Rub<\/a><\/li>\n<li>2 tsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/cumin-spice-sea-salt\/\">Cumin Spice Sea Salt<\/a><\/li>\n<li>2 Tbsp Tomato Paste<\/li>\n<li>1 Tbsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/ginger-white-balsamic-vinegar\/\">Ginger Balsamic Vinegar<\/a><\/li>\n<li>14.5 oz Canned Garbanzo Beans<\/li>\n<li>14.5 oz Canned Coconut Milk<\/li>\n<li>32 oz Vegetable Stock<\/li>\n<\/ul>\n<p><strong>TOPPINGS<\/strong><\/p>\n<ul>\n<li>2 Tbsp Sour Cream<\/li>\n<li>1 Tbsp Water<\/li>\n<li>2 tsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/ginger-white-balsamic-vinegar\/\">Ginger Balsamic Vinegar<\/a><\/li>\n<li>Chopped Cilantro &amp; Raisins, to finish<\/li>\n<\/ul>\n<p><strong>DIRECTIONS<\/strong><\/p>\n<ol>\n<li>In a stock pot over medium heat add Curry Infused Olive Oil. Once hot add in onions, saut\u00e9 until translucent about 4 minutes. Add in garlic and ginger and cook until fragrant, about 1 minute.<\/li>\n<li>Add in sweet potatoes, Mango Masala Rub, Cumin Spice Sea Salt, and tomato paste. Let cook for 1 minute to let the spices toast, Add in Ginger Balsamic Vinegar, chickpeas, coconut milk, and chicken stock.<\/li>\n<li>Bring soup to a boil, then reduce to a simmer. Let cook for 20 minutes or until sweet potatoes are fork tender. Use a blender to pure\u00e9 soup until smooth, working in batches if needed.<\/li>\n<li>In a small bowl whisk sour cream, water, and Ginger Balsamic Vinegar together.
