The red lentils and sweet potatoes are complemented by the slightly sweet and aromatic coconut curry flavors. This dish will make Red Lentils a new staple in your pantry.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>2 Tbsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/curry-infused-olive-oil\/\">Curry Infused Olive Oil<\/a><\/li>\n<li>1\/2 Yellow Onion, diced<\/li>\n<li>2 Cloves Garlic, minced<\/li>\n<li>1 tsp Fresh Ginger, grated<\/li>\n<li>1 Medium Sweet Potato, peeled and cut into 1&#8243;in cubes<\/li>\n<li>2 Tbsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/mango-masala-rub-seasoning\/\">Mango Masala Rub<\/a><\/li>\n<li>2 Tbsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/ginger-white-balsamic-vinegar\/\">Ginger Balsamic Vinegar<\/a><\/li>\n<li>1\/2 cup Red Lentils<\/li>\n<li>14.5oz Can Coconut Milk<\/li>\n<li>1 cup Vegetable Broth<\/li>\n<li>1 cup Green Beans, cut into 1&#8243; pieces<\/li>\n<li>Naan, for serving<\/li>\n<\/ul>\n<p><strong>DIRECTIONS<\/strong><\/p>\n<ol>\n<li>In a high sided saut\u00e9 pan, heat Curry Infused Olive Oil over medium heat. Add in onion and saut\u00e9 until translucent, about 3 minutes. Add in garlic and ginger and food for antoher minute or until fragrant.<\/li>\n<li>Add in sweet potato, Mango Masala Rub, and Ginger Balsamic Vinegar, cooking until potato has softened slightly about 5 minutes.<\/li>\n<li>Add in red lentils, coconut milk, and vegetable broth.
