This dish packs a ton of flavor using our Cumin &amp; Garlic Taco Seasoning for the perfect savory bite! Paired with savory white sauce, sweet corn, and spicy jalape\u00f1os for a balance of flavor.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>2 Chicken Breasts<\/li>\n<li>3 \u00bd Tbsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/cumin-garlic-taco-rub-seasoning\/\">Cumin &amp; Garlic Taco Seasoning<\/a>, divided<\/li>\n<li>6 Tbsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/fiesta-spice-olive-oil\/\">Fiesta Spice Infused Olive Oil<\/a>, divided<\/li>\n<li>1 Cup Corn, fresh or frozen<\/li>\n<li>2 Jalape\u00f1os, diced<\/li>\n<li>\u2153 Cup <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/jalapeno-lime-white-balsamic-vinegar\/\">Jalape\u00f1o Lime Balsamic Vinegar<\/a><\/li>\n<li>2 Cups Monterey Jack Cheese, divided<\/li>\n<li>2 Tbsp Flour<\/li>\n<li>1 \u00bd Cups Chicken Broth<\/li>\n<li>1 Cup Sour cream<\/li>\n<li>8 Corn Tortillas<\/li>\n<\/ul>\n<p><strong>DIRECTIONS<\/strong><\/p>\n<ol>\n<li>Heat oven to 400F and line a baking sheet with parchment paper. Rub chicken with 2 Tbsp rub and 2 Tbsp fiesta spice oil. Bake for 20 minutes or until done and shred with two forks. Turn down the oven to 375F.<\/li>\n<li>In a bowl add chicken, corn, jalape\u00f1os, vinegar, and 1 cup monterey jack.<\/li>\n<li>In a high sided saucepan heat 2 Tbsp olive oil then add flour, cook 2-3 minutes careful not to let roux brown.<\/li>\n<li>Add chicken stock slowly while whisking and cook for another 2-3 minutes. Add in the sour cream and the remaining 1 \u00bd Tbsp of rub.<\/li>\n<li>In a small skillet, heat 2 Tbsp of oil over medium, cook tortillas 2-3 minutes per side.<\/li>\n<li>Add 2-3 Tbsp of filling into the tortilla and roll, placing the fold side down in the pan.<\/li>\n<li>Pour sauce over tortillas and top with remaining cup of cheese.
