Cook for 15 minutes, flip bacon, then cook for another 10 minutes. Drain on paper towels then chop into small pieces, reserving 2 slices of bacon for topping.<\/li>\n<li>In a small bowl combine the flour, baking powder, baking soda, and salt.<\/li>\n<li>In a medium bowl combine the maple syrup, buttermilk, oil, and egg. Whisk until well combined.<\/li>\n<li>Add dry ingredients into wet ingredients and whisk until just combined, careful not to overmix. Carefully fold in the 6 slices of candied Bacon. Let the batter rest for 5 minutes.<\/li>\n<li>Heat a waffle iron and grease. Pour \u2153 cup &#8211; \u00bd cup batter into the waffle iron and follow manufacturer instructions for cooking.<\/li>\n<li>Meanwhile in a small pot over medium heat combine maple syrup, bourbon balsamic vinegar, and bourbon.
