This chili lime roasted chickpeas add protein and flavor to this salad (and can even be made on their own for a snack). Add in salty sweet sun dried tomatoes, tangy goat cheese, and a perfectly creamy sweet and spicy salad dressing to top off the kale. Perfect for Meatless Monday dinners or lunches for the week!<\/p>\n<p><strong>Ingredients\u00a0<\/strong><\/p>\n<p><strong>For the Salad<\/strong><br \/>\n1 Can Chickpeas, drained and rinsed<br \/>\n2 Tbsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/hatch-chili-infused-olive-oil-new\/\">Hatch Chili Infused Olive Oil<\/a><br \/>\n1 tsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/chipotle-lime-rub-seasoning\/\">Chipotle Lime Rub &amp; Seasoning<\/a><br \/>\n1 \u00bd tsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/chili-verde-flake-sea-salt\/\">Chili Verde Sea Salt<\/a><br \/>\n3-4 Cups Green and Purple Kale, rinsed and chopped<br \/>\n\u00bd Cup Sun Dried Tomatoes<br \/>\n\u2153 Cup Goat Cheese, crumbled<br \/>\n2 Tbsp Pumpkins Seeds<\/p>\n<p><strong>For the Dressing<\/strong><br \/>\n\u00bd Cup Greek Yogurt<br \/>\n\u00bc cup <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/hatch-chili-infused-olive-oil-new\/\">Hatch Chili Infused Olive Oil<\/a><br \/>\n\u00bd Medium Lemon, juiced<br \/>\n2 Tbsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/pineapple-habanero-balsamic-vinegar-new\/\">Pineapple Habanero Balsamic Vinegar<\/a><br \/>\n1 tsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/chili-verde-flake-sea-salt\/\">Chili Verde Sea Salt<\/a><\/p>\n<p><strong>Directions<\/strong><br \/>\nPreheat the oven to 425F.<\/p>\n<p>In a bowl toss chickpeas with 1Tbsp olive oil, chipotle lime rub, and 1 tsp salt. Spread on a parchment lined baking sheet and roast until crispy 20-25 minutes.<\/p>\n<p>Meanwhile in a bowl combine dressing ingredients.<\/p>\n<p>In a large bowl massage kale with 1 Tbsp olive oil and \u00bd tsp sea salt to help soften the kale.
