This Spanikopita melds the flavors<br \/>\nof salty feta, sweet spinach, and bright lemon flavors to give you a recipe you\u2019ll<br \/>\nwant to make for every potluck!<\/p>\n<p>&#8230;<\/p>\n<p>Prep Time: 45 minutes &#8211; Cook Time: 45 minutes &#8211; Total Time: 90 minutes<br \/>\nYield: Serves 8<\/p>\n<p>&#8230;<br \/>\n<strong>Ingredients:<\/strong><\/p>\n<p>1 Tbsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/sicilian-lemon-olive-oil\/\">Sicilian Lemon Olive Oil<\/a><br \/>\n1 Sweet Onion, diced<br \/>\n2 Garlic Cloves, grated or minced<br \/>\n3 cups Spinach<br \/>\n1 Tbsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/cucumber-vinegar\/\">Cucumber Balsamic<\/a><br \/>\n\u00bc tsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/citrus-dill-sea-salt\/\">Citrus Dill Sea Salt<\/a><br \/>\n4 Eggs<br \/>\n16 oz Feta<br \/>\n1 Tbsp <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/greek-tzatziki\/\">Greek Tzatziki Seasoning<\/a><br \/>\n1 package Phyllo Dough, thawed<br \/>\n\u00bd cup <a href=\"https:\/\/coppermooseoilandvinegar.com\/index.php\/product\/sicilian-lemon-olive-oil\/\">Sicilian Lemon Olive Oil<\/a>, to brush Phyllo Dough<\/p>\n<p><strong>Instructions:<\/strong><\/p>\n<p>Preheat oven to 350 F.<\/p>\n<p>Heat 1 Tbsp Lemon Olive Oil over medium high heat. Add onion and saute<br \/>\nuntil translucent, about 4-5 minutes. Add garlic and cook until fragrant, about 1 minute. Add spinach, vinegar, and salt, then cook until wilted, about 3-4 minutes. Let the wilted spinach cool and drain any excess moisture by squeezing over acolander. In a bowl, stir spinach with eggs, feta, and Greek Tzatziki Seasoning. Prepare a 9\u201dx13\u201d baking dish by coating the bottom and sides with olive oil. Layer two sheets of phyllo dough then generously brush with olive oil, repeatuntil 2\/3 of the phyllo dough is used. (Note: Phyllo dough can dry out quickly, keep the unused dough covered with a damp cloth or work quickly.) Spread all the feta and spinach filling into the pan in an even layer.<br \/>\nContinue to layer the phyllo sheets two at a time, brushing with olive oil until<br \/>\nall the dough is used up. Make sure the edges of the phyllo dough are coated with olive oil, fold over<br \/>\nany excess dough. Bake for 45 minutes or until phyllo is golden and flaky.
